Guava is commonly used as a medicine against gastroenteritis and child diarrhoea by those who cannot afford or do not have access to antibiotics. The present study is focuses on the antimicrobial and antioxidant activity of the seeds which is extracted by using two solvents (Methanol,Hexane) and also check the shelf life of frozen chickens coated with raw guava seeds on the surface of the chicken meat. Overall acceptability, total bacterial counts (TBC) of the control and treated minced meat were determined every 48 hours during refrigerated storage. The activity of coated chicken have been tested for about 9 days interval showed antimicrobial activit. This also suggest that guava seed extracts could be very effective in extending shelf life and delaying lipid oxidation of treated meat during chilling attributes, providing the consumer with more healthy food containing a natural antioxidant and antibacterial additive, as an alternative to synthetic additives.
